Thai durian receiving and packing requirements: what processors should check

Separate maturity inspection, commodity grades and packing-house hygiene, then connect them to receiving, cleaning, sorting and batch records.

Scope

Collection and packing of whole fresh durian in Thailand. Do not apply the fresh-fruit receiving procedure directly to fresh-cut or frozen production.

Understand the role of each standard

TAS 3-2024 is a general commodity standard covering fresh durian quality, grades, size and packaging; check any provisions incorporated by other requirements. TAS 9070-2023 is the mandatory receiving standard for collecting and packing houses. Packing-house hygiene is addressed separately in TAS 9035-2020. These documents serve different purposes.

Check origin and maturity when receiving fruit

Under TAS 9070, check batch origin and maturity evidence, visually inspect every fruit in each batch for maturity, and follow the prescribed dry-matter sampling and retest procedure. Segregate, identify and record the disposition of nonconforming fruit; do not mix it back into accepted fresh-fruit batches. Keep the relevant records for at least two years.

Do not confuse dry matter, weight and quality grade

TAS 3-2024 specifies a minimum dry matter of 32% for Monthong. This is a cultivar-specific maturity measure, not sugar content or a universal value for all durian. Extra, Class I and Class II also involve appearance and quality conditions. Weight sorting alone does not establish a quality grade.

Manage hygiene and batch identity

Check layout, water, equipment cleaning, personnel hygiene and cross-contamination controls against the applicable practices. Connect incoming and outgoing batches through packaging and records, and keep cleaned fruit away from untreated incoming fruit and waste flows.

Turn requirements into equipment discussion points

Allow space at receiving for inspection, sampling and rejected fruit. Connect washing and surface water removal to weighing and sorting. Discuss cleanable contact areas, transfer drops, drainage and batch identification. Weighing supplies weight data; maturity, residue and pest checks still require appropriate people and testing.

Bring product and order conditions to the quotation

Specify cultivar, fruit-weight distribution, target grades, packaging and site utilities. If fresh-cut or frozen durian is also produced, map its process and applicable requirements separately before defining equipment scope. Physical box packing after combination weighing remains manual.

Official documents and references

This is a summary of source documents; engineering advice is labelled separately. Check the product, origin, current official documents and authority requirements. Equipment acceptance follows the technical agreement confirmed by both parties.
